Day two...

... of the three day weekend. Over cast and a little drizzly outside. Okay, let's try something I'd heard about and couldn't get out of my head, Carrot cake pancakes.
I found a couple off recipes on the web and modified to suit my taste, I always use pineapple in my carrot cake so why not in the pancakes?

2 eggs
3/4 cup buttermilk
2 Tbsp veg. oil
1/2 tsp real vanilla
1/4 cup brown sugar
2 cups flour
1 Tbsp baking soda
2 Tbsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup shredded carrots
1 cup crushed pineapple, with juice
Beat wet ingredients together with brown sugar, sift dry ingredients together and stir into wet ingredients. Add carrots and pineapple, sttir well and let set for 10 minutes.
Heat up the griddle and cook cakes slowly until edges are dry and tops are bubbly, turn and cook a few minutes more.
I was out of maple syrup so I served them drizzled with honey. a buttermilk sugar glaze would also have been good. Or, for those who like their carrot cake to have a cream cheese frosting, beat some maple syrup into some softened cream cheese.

Now, the house desperately needs vaccumed. I think I'll grab my knitting and go lay in front of the T.V. for a while.

Günter, geoff war noch Da als ich sie kochte, wann er wieder nach Hause kam lag ich noch vorm Fernseher, ich hatte aber schon die Geschirr weggeräumt, jetzt kann er die Staubsauger bedienen ;D

Hey Lars, i never could be your boyfriend! If you are cooking the whole time such lovely and tasty things i would explode within one or two weeks! And you have to made a new "greater and bigger" pullunder every 3 days!!!!

maybe i find someone who can make these for me it´s a shame that i´m such a bad cook i really like to cook but i only can cook a few things and when i try something new, i most of the time have to call Giovanni ... the Pizza Guy around the corner o0

Zing, at least you someone to rely on when things go wrong. Maybee while your back is healing and you can't do sports you should take cooking classes. as an eligible bachelor such a skill would certainly increase your market value;P
